We’ve been loving having muesli with some yoghurt in the morning. It’s so fresh and satisfying, and surprisingly filling. We’re particularly fans of some plain Greek yoghurt with a drizzle of honey; Grandma’s homemade vanilla; or @ouibyyoplait
If you want to try it for yourself, here’s the recipe!
3 C oats
1/4 C oat bran/wheat germ
1/4 C finely chopped walnuts
1/4 C pepitas
1/4 C coconut oil
1/2 tsp salt
1 tsp cinnamon
1/4 C maple syrup .
Mix in a large bowl and place on a baking pan lined with parchment or a silicone mat.
Bake at 350F for 15min
Remove from the oven and add 1/4 C of seed mix (I use flax, chia, and hemp) and 1 C of dried fruit (I use chopped apricots, chopped cherries, and blueberries). *I usually also add another 1/4 C of coconut oil + another 2 Tbsp of maple syrup + a dash of cinnamon. .
Bake for an additional 10-15min. Remove from the oven and let cool before transferring to an air-tight container.
