This is the most amazing white bean shakshuka! It's made with cannelini beans, arugula, fresh cilantro 🌿, green pepper, onion, garlic, and spiced with cumin, smoked paprika, aleppo pepper, harissa paste and topped with goat's cheese. I serve it with plenty of buttered baguette to dip into the delicious sauce.
This meal is high in protein and fiber with added arugula 🌿 and flavorful spices 🔥 that we absolutely devoured. It's so yummy! It's not too spicy 🔥 just very flavorful.

RECIPE FOR WHITE BEAN SHAKSHUKA:
3 Tbsp EVOO
1 medium onion finely chopped
1 green bell pepper chopped
3 cloves garlic chopped
1 28 oz can of tomato 🍅 puree
1 15 oz can cannelini beans drained
1/2 Tbsp Harissa paste (I used Trader Joe's)
1/2 tsp cumin
1/2 tsp smoked paprika
1/2 tsp Aleppo pepper
3 cups roughly chopped arugula🌿
Himalayan salt and freshly ground black pepper to taste
Goat cheese crumbles
Fresh cilantro 🌿 for garnish
In a hot frying pan over medium heat 🔥 add the EVOO, onion and green pepper. Add some salt. Cook until onion is translucent. Add the garlic and cook for 2 more minutes. Add the tomato 🍅, cannelini beans, salt, black pepper, cumin, Harissa paste, smoked paprika, and Aleppo pepper and heat through. Taste for seasonings. Make 4 wells on top and drop 1 egg🥚 in each. Simmer until the sauce thickens, the egg🥚 whites are fully cooked and the yolks are done to your liking. Top with goat's cheese and fresh cilantro 🌿 and enjoy with buttered toast.
