[ɪɴsᴛᴀɴᴛ ᴘᴏᴛ- ᴠᴇɢᴇᴛᴀʀɪᴀɴ ɢʀᴀᴘᴇ ʟᴇᴀᴠᴇs]
The most delicious vegetarian grape leaves in as little as 18 minutes in your instant pot or pressure cooker! Cooked to perfection 👌🏻the taste is on point with mixed vegetables, a delicious light tang of lemon, extra virgin olive oil and dried mint.
✨1 1/2 Jars pickled grape leaves
✨2 diced medium onions
✨6 medium diced tomatoes
✨2 bunches chopped curly parsley
✨1 tbs salt
✨1 tbs dried mint
✨2 lemon juice or 2 tsp citric acid
✨1/2 cup olive oil
✨3 cups short grain rice
✨2 tsp seven spices (all spice)
💦Salt to taste
💦Half of a 1/4 tsp seven spices (all spice)
💦1/2 cup lemon juice or 1/4 tsp citric acid
💦1/3 cup olive oil
🍀Soak grape leaves in water for 15 minutes them place in strainer.
🍀Mix the stuffing ingredients then place in another strainer and over a bowl to collect the juice. Taste it and adjust salt if needed.
🍀Get a grape leaf and cut the stem off. Lay it flat on a hard surface, rough side facing up. Fill with about 1/2 tbs stuffing.
🍀Fold from the right side of the leaf, then left side and begin tightly rolling. Place in the pot.
🍀Tip: Lay about 6 leaves at once and place filling on each and roll one by one for quicker results.
🍀Once finished strain the juice of the rice mixture and add over the rolled leaves in the pot.
🍀In a bowl add the “broth mixture” ingredients listed above then mix, taste and pour over the rolled leaves placed in pot.
🍀Set pressure cooker on rice mode for 18 minutes.
