'Star Grazing' Platter
The easiest of starters and a feast for the eyes (and tummy!). The key is to make it colourful, keep it to a small surface area and pile it high!
For some easy ideas on what to add why not: ✔ cut up some crudites (carrots, celery, cucumber, peppers, radishes)
✔ layer on some cured meats (parma ham, salami)
✔ dot about a few chunks of your favourite cheese
✔ add some biscuits, bread sticks or wholegrain bread
✔ throw in some whole (unpitted) olives
✔ make a couple of dips (see recipes below)
✔ add some nuts (toasted almonds, brazil nuts or cashews)
✔ finish with some grapes, baby tomatoes, figs, apricots or anything with a hint of natural sweetness!
Hummus - blend up 1 tin of chickpeas (rinsed), 1 clove of garlic, 2 tablespoons tahini paste, 1 teaspoon smoked paprika and a good grinding of salt and pepper.
Red Pepper & Feta - blend up 300g feta, 120g jarred red peppers (drained weight), 3 tablespoons olive oil. Finish with feta and a good grinding of pepper and salt.
