I talked about this in my stories on Sunday, but here’s how Christopher and I do our meals... Each week we pick two meals in that last us from Monday until Thursday. We have the first meal on Monday, the second meal on Tuesday, the first meal again on Wednesday, and the second meal again on Thursday. On Friday and Saturday we either eat leftovers or eat out. This is a good way for us to save money by making sure we use all of our ingredients, but it also gives us the chance to perfect the meals the first time we make them so that they’re even better the second time! Meal #2 this week was sun-dried tomato & mozzarella chicken with asparagus + alfredo pasta on the side. Had it on the table in 25 minutes, and off the plate in 5😋 Here’s how I made it: •Cut a chicken breast in half, and coat both pieces in panko mixed with onion power, garlic powder, salt and pepper. •Place that on a baking sheet with asparagus and spray it all with olive oil spray. Bake for 20 minutes on 450°. •When there’s 10 minutes left for the chicken and asparagus, cook the pasta and then strain + mix with some alfredo sauce in a bowl on the side. •After 20 minutes of baking, top the chicken with sun-dried tomatoes from a jar and mozzarella and bake for 6 more minutes. When it’s all done, sprinkle the asparagus with parmesan. Done! —— Chicken breasts (0) Mozzarella (2) Asparagus (0) Pasta (8) Panko (2)

Gluten Free Lasagna Roll Ups- for when you don’t feel like making an entire lasagne! How to👇🏻 Cook 1 lb of grass fed beef and season with salt and pepper then mix with your favorite marinara sauce- my fav is @raoshomemade sensitive marinara sauce. Ricotta mixture In a mixing bowl combine 2 cups of ricotta 1 large egg 1 cup freshly grated Parmesan Salt and pepper Additional toppings 1/2 cup of finely chopped parsley (I chopped it in the blender) 1/2 cup chopped tomatoes. Pre heat oven to 350 In a deep Pyrex dish place a thin layer of marinara sauce across bottom Taking a pre cooked sheet of lasagne I used @taste_republic Gluten free lasagna sheets- my fav! Spread ricotta mixture down the center of lasagna noodle. Then top ricotta mixture with ground beef, then some chopped spinach and some top tomatoes, top with some extra marinara sauce and then sprinkle with some parmigiana and roll up tightly. Place each roll into Pyrex dish and top each one with marinara sauce and some shredded parmigiana. Place dish in oven and bake for 20 mins. 'Star Grazing' Platter The easiest of starters and a feast for the eyes (and tummy!). The key is to make it colourful, keep it to a small surface area and pile it high! For some easy ideas on what to add why not: ✔ cut up some crudites (carrots, celery, cucumber, peppers, radishes) ✔ layer on some cured meats (parma ham, salami) ✔ dot about a few chunks of your favourite cheese ✔ add some biscuits, bread sticks or wholegrain bread ✔ throw in some whole (unpitted) olives ✔ make a couple of dips (see recipes below) ✔ add some nuts (toasted almonds, brazil nuts or cashews) ✔ finish with some grapes, baby tomatoes, figs, apricots or anything with a hint of natural sweetness! The Dips: Hummus - blend up 1 tin of chickpeas (rinsed), 1 clove of garlic, 2 tablespoons tahini paste, 1 teaspoon smoked paprika and a good grinding of salt and pepper. Red Pepper & Feta - blend up 300g feta, 120g jarred red peppers (drained weight), 3 tablespoons olive oil. Finish with feta and a good grinding of pepper and salt. Serves 4 20 minute recipe

🍅🧡Salsa verde is one of our favorite salsas. It brightens just about everything you dip into it or serve it with. Using an oven broiler makes quick work of the roasting. It will take about 15 minutes. Once roasted, it is very easy to remove the skins from the peppers as well as most of the seeds. WOWAWIWA, it’s been a minute since I posted (oops)! Is it just me or did summer fly by?! Can’t believe fall is already upon us! But tbh...fall is my favourite season (in Toronto). The days are still sunny, blue skies (for the most part), air is crisp, and of course, BAKING! I was feeling peachy keen and had a bunch that needed to be used so I made a crumble and it was super easy and delishhhhhh😋😋🍑🍑🍏🍎🍑🍑 . . . Basically eye balled everything: Chopped up 5 peaches and 1 apple For the topping: 1 cup of oats 1/2 cup of flour 1 cup brown sugar Dash of cinnamon Lots of butter😉 Baked for an hour at 375 Et voilà!👌🏼👩🏻‍🍳 (Swipe left for the finished product💃🏻)

Faites-vous attention aux proportions de vos repas ? Personnellement, je ne le faisais pas du tout avant. Avec les conseils de catherinepolet.coach, j’ai appris à manger plus de légumes que de féculents ou de protéines. Cela ne veut pas dire que je me prive, bien au contraire. Cependant, les fruits et les légumes, grâce à leurs fibres et à leur volume, favorisent la régularité intestinale. Ils fournissent aussi la nourriture privilégiée des précieuses bactéries qui habitent l’intestin donc c’est toujours un bon moyen de s’habituer à en manger plus au quotidien ! J’ai toujours réalisé mes plats de manière instinctive et en réalité, ce n’est pas vraiment la bonne solution. Mon assiette est composée ici de moitié en légumes, d’1/4 de protéines et d’1/4 de féculents. Au menu, des lentilles revenues légèrement au beurre, des PDT, de l’avocat, un peu d’huile d’olive et du jus de citron, des épices (ail, persil, paprika, sel, poivre) et du concombre. HELLO Je vous présente ma crème au chocolat vegan à base d’🥑 (dernière recette de dessert que je réalise avec ce fruit pour des raisons 🌍). Voici les ingrédients pour les petits curieux : 2 avocats, 85g de miel ou sirop d'agave, 65g de lait de coco ou d’amandes, 45g de chocolat noir, 30g de cacao non sucré, noix de pécan 25g et un peu de vanille liquide (facultatif). Préparation : Couper les avocats en deux, retirer le noyau et récupérer la chair. La mettre dans le mixeur. Ajouter le chocolat fondu, le cacao en poudre, le miel, la vanille et le lait de coco, puis mixer. Le petit déjeuner de ce matin : Du porridge aux raisins et graines de lin avec le nouveau packaging de Turtle (je suis fan 🙈), du lait d’amandes, des myrtilles, du nocciolata, de la poudre de noix de coco, des raisins enrobés de chocolat au lait et des noix diverses. Bien gourmand comme je les aime 😋 Pour l’accompagner, j’ai infusé dans un verre d’eau du citron vert et du basilic. Selon les conseils de Catherine, coach santé nutrition, j’ai commencé à boire plus d’eau et ce, dès le réveil. C’est quelque chose que je ne faisais jamais et pourtant, ça ne vous prend que deux minutes. Pour le goût, si comme moi vous n’aimez pas l’eau nature, c’est une assez bonne solution. N’hésitez pas à varier, utiliser des herbes aromatiques, des fruits ou des légumes. Grâce à ses conseils (bien respirer, s’hydrater plus ect), je ressens déjà une diminution de migraines et c’est vraiment agréable. Comme une envie de gâteau 🙈 J’ai eu envie de réaliser à nouveau un petit gâteau avec mes nouveaux ustensiles de cuisine. Je dois vous avouer que pour le moment je n’ai pas l’occasion de tester des adresses ou de réaliser des recettes tout le temps avec ma toute petite cuisine donc je fais au mieux. Je vous présente une fois de plus mon Layer Cake composé d’une génoise nature imbibée d’un sirop au citron (frais), une chantilly mascarpone à la vanille, un peu de feuillantine pour le côté croquant et des fraises.
