Goes to Annapolis once; craves corn,and crab cakes, with Red Lobster’s biscuits, and Savagnin.
Corn is sauteed with lots of butter and scallions, without browning, with creme fraiche, then cut with lots of Crystal for heat and acidity, and served with sungolds. Do not underseason biscuits (generous with old bay and cayenne, easy on garlic powder or they will smell like pizzeria garlic knots). Crabcakes, broiled.
2016 Les Granges Paquenesses - Intime Conviction, made from 50somthing year old vines on a south facing hillside, for a deep and rich style, and longer barrel aging. A pleasure with the old bay laced crab and as a foil to the various dairy fats on the plate.
