Pumpkin Spiced-Kentucky Bourbon Rice Pudding
About 6-8 servings
Use a 4 quart sauce pan
Add 4 c milk or substitute
Drop 4 sticks of canela (real cinnamon sticks in Latin aisle of your market)
Bring milk to an almost boil
Stir in 2 cups of rice
Reduce heat to low-med
Add 1/2 tsp pumpkin spice
Add 1/2 c bourbon
Add 1/2 c honey
Constantly stir making sure wooden spoon touches the bottom of the sauce pan.
All in all your looking at 30 min or so, depending if you like your rice fully cooked or with a slight bite.
Reserve about 2 cups of hot water in case it is too thick.
Or add more milk.
At the end I added 1 1/2c of hot h2o.
Once rice is cooked to desired liking, serve.
Drizzle with honey & sprinkle with pumpkin spice.
