This is a common middle eastern breakfast dish but it is also a traditional Ethiopian 🇪🇹 & Eritrean 🇪🇷 dish. It is a hearty breakfast made with fava beans. Some also add eggs to the toppings. Everyone has their own version of making it. I used to make it in so many different ways but this is the way I make mine now. .
Recipe for 1 serving size below! .
1 can of Foul Medames (fava beans) or dried fava beans to soak overnight & boil
1 red onion (diced)
1 tomato (diced)
1 jalapeño (diced)
1 piece of fresh ginger (or ginger powder)
2 cloves of garlic (finely chopped)
Sour cream (vegan or non vegan)
salt to your liking
Your choice of bread .
In a heated pan or pot, add 2 cloves of finely chopped garlic, 1/2 of diced onion, and a small 1 inch piece of fresh ginger (or 1tsp of ginger powder) with a drizzle of olive oil.
Sauté for 1 mintier then add your spices (cumin, coriander and a pinch of salt). Let the spices infuse with the oil for another 1-2 minutes lowering the heat.
Then add a can of your fava beans including the liquid. Turn up the heat to bring it to a boil then lower the heat. Squeeze a quarter piece of lime and stir.
With a potato masher (you can also just use a fork or a portable blender) mash all the beans into a purée. If it gets a little thick you can add 1/4 cup of hot water for a smoother consistency. Total cooking time is a total of 15min
Transfer the mashed beans into a bowl and add all of your toppings as pictured above. You can also add red pepper flakes or (mitmita which is an Ethiopian/Eritrean ground pepper) Drizzle a little bit of olive oil then serve with toasted bread or pita. DELICIOUS!!!! **if you are using dried fava beans, soak it overnight then boil it in water adding salt on low heat for 45minutes then follow the recipe.
