Ok, so I know fall is coming and Iโ€™ve even been dabbling in the fall recipes too, but you can pretty much grill all year round, amirite? I recently saw an insta story by @everythingyouwanttoeat where Emily prepped and grilled artichokes (see her story highlights). I was at @traderjoes yesterday and happened to see some whole artichokes and I just had to grab them. You know I love artichokes and eat them from the can regularly, but nothing really compares to this! I made the most delicious #oilfree and #vegan aioli with cashews as the base to go with it and it was so good I could basically drink it (recipe from @thesimpleveganista ). This would be an awesome side dish when entertaining too because theyโ€™re so pretty! Happy Monday! . . . DEETS... โ€ข slice 1/4 in off the top of artichokes, trim the bottoms, pull off the really hard outer leaves, and using scissors, trim the top spikes part off the other leaves. Slice in half and scoop the choke out with a spoon. Boil a large pot with water, sliced lemon and some salt and place artichoke halves in. Cover and simmer for about 20 mins until the stalk is easily pierced by a fork... โ€ข drain and dry off. Brush some olive oil on the inner parts of the halves and grill over medium/high heat for about 5-10 mins, until they have grill marks to your liking. Add a little salt at the end with some fresh lemon juice... โ€ข aioli: add 1C cashews (pre-soaked preferably) to a high speed blender along with 3 garlic cloves, the juice of 1 lemons, 2tsp Dijon mustard, 3/4C water and a little salt. Blend on high until smooth... โ€ข Enjoy!

The first time I had Edamame was in a Japanese restaurant in California and to tell you the truth, I havenโ€™t found that freshness anywhere else. Itโ€™s FRY-day and even thought itโ€™s been a short week, itโ€™s kind of felt like a long one...anyone else feel that way? I decided we definitely needed some fries in our life today, but tried to keep it on the healthier side. This is a mix of Idaho potato, sweet potato and carrot fries and theyโ€™re the perfect side to a meal or after school snack for the kiddos. Just slice into fry shapes, add a little avocado oil, salt, pepper and garlic powder (or whatever other herbs you want) and bake at 425F for 40 mins, flipping midway through. ๐ŸŸ ๐Ÿ‘Œ๐Ÿผ ๐Ÿ˜‹

Hereโ€™s a super healthy and easy meal idea for this week: bake some sweet potato rounds (add salt, pepper, garlic powder and bake at 425F for about 20mins, flipping midway through), add quinoa, lettuce, chickpeas, fresh veggies and a guac made of mashed avocado, jalapeรฑo and lime juice. Sorry for posting so late for the yesterday's teaser...as I am not keeping well ..for this teaser many of you came up with various options but these ingredients were used in making two breakfast dishes...this makes it a complete power packed breakfast . 1.CHICK PEAS BLACK CHANA BEETROOT PANCAKES 2.CHICKPEAS BLACK CHANA SPINACH OATS APPE Two yummy and healthy breakfast options made out of the same batter. What I did ....pureed the soaked chanas with a piece of ginger,garlic cloves and green chillies and divide the batter in two parts .. To the pancake batter add beetroot and rice flour and salt keep aside To Appe batter add spinach puree about a cup of oats,flax seeds and chia seeds ,salt ,chopped onion,green chillies, coriander leaves...mix well and keep aside. Now take flat tawa for making pancakes and for Appe take the Appe pan For pancakes pour the batter on flat tawa top it up with chopped onion , coriander leaves ,green chillies and cumin seeds and cook on both sides. For Appe fill the cavities with the above batter and cook well. Serve hot with chutney's of your choice. Made this really delicious omelet in an avocado ring for breakfast the other day. Didnโ€™t quite work out the way I wanted it to because I was a little too impatient ๐Ÿ˜ฌ๐Ÿ™ƒ but tasted really bomb ๐Ÿ’ฃ โ€ขโ€ขโ€ข Finely sliced up some avocado & made a ring with it, beat the egg white up and fold the egg yolk under, pour into the ring and bake in the oven (I think if you bake it for 20min itโ€™ll work but I didnโ€™t). Roasted a few cherry tomatoes on the side along with some toasted whole grain bread. CARROT CAKE & CASHEW FROSTING: the most delishhhh combo!!! Perfect for morning tea with a cup of tea or coffee! Warning: stopping at one slice is the toughest thing youโ€™ll ever do. ๐Ÿ˜‰๐Ÿ˜โ € .โ € CARROT CAKE:โ € 3 carrots, choppedโ € 2 cups almond mealโ € 2 eggsโ € 1 tsp cinnamon โ € 1/2 tsp gingerโ € 1 tsp baking powderโ € 2 tbs honey.โ € .โ € CASHEW FROSTING:โ € 3/4 cup cashewsโ € 2 tbs ricottaโ € 2 tbs honeyโ € 6 datesโ € 2 tbs milk (almond/coconut). โ € .โ € 1. We think they taste even better than the original: ๐Ÿ˜œ๐Ÿฅฐโ € .โ € 1 large chicken breastโ € 1 egg (wet)โ € 1 tsp minced garlic (wet)โ € 1/4 cup almond meal (dry)โ € 1 tsp onion powder (dry)โ € 1/2 small red chilli, de-seeded & diced (dry)โ € 1/2 tsp smoked paprika (dry)โ € 1 tsp basil (dry)โ € 1/2 tsp salt (dry).โ € . โ € 1. Cut the chicken breast lengthways into 3 or 4 slices. โ € 2. Whisk the wet ingredients together in small bowl. โ € 3. Mix all dry ingredients together in separate bowl. โ € 4. Place the chicken in wet mixture, then into the dry.โ € 5. Ensure it is coated well on both sides.โ € 6. Place on a lined baking tray & repeat until all gone.โ € 7. #recipeatchai Well you all must be eagerly waiting for what I made with the ingredients I showed in the teaser...many of you came up with many options to which I said No...Many answered Granola /energy Bars to which I said NO....Now is the time to disclose what exactly I made....This Recipe Has 3 Elements.. 1.BASE-That is made with Almond flour ,coconut Flour , jaggery ,chia seeds and coconut oil About a Cup of Almond flour and half a cup coconut flour along with a Tblspn of coconut oil +1 Tblspn of chia seeds with jaggery as your sweetner ...as per taste ,add a little coconut milk to create a dough like base .Bake for about 12/15 mnts at 180ยฐ 2.MIDDLE LAYER -Is made of jaggery /peanut butter and sea salt ...which means salted peanut butter jaggery caramel 4tblspns of jaggery powdered along with 2 heaped spoons of chunky peanut butter and little water ,a pinch of sea salt ...cook on low flame till you achieve caramel like consistency 3.TOP LAYER-Has Dark chocolate,coconut cream ,coconut oil and whole loads of Nuts and seeds which are dry roasted they contain walnuts/Almonds/flaxseed/pumpkinseed/melonseeds/sunflower seeds.. This has a cup full of dark chocolate with a Tblspn of coconut oil and about 2 tblspns of coconut cream mixed well...and all nuts and seeds dry roasted to top it up. Hence the Name that comes to my mind is... LAYERED ALMOND FLOUR SALTED CARAMEL NUT AND SEED BARS Yes ...They are bars which are layered ...step by step ...base is baked... It has all the goodness of all super healthy ingredients and all super foods in one go...and the peanut butter salted caramel was unbelievably tasty....and toasted nuts with chocolate coconut cream adds the perfect crunch to these layered bars... Amazingly tasty ,easy to make and your go to dessert anytime you crave for a chocolate Bar...and it tastes more like a Snicker Bar...
