yesterday and happened to see some whole artichokes and I just had to grab them. You know I love artichokes and eat them from the can regularly, but nothing really compares to this! I made the most delicious #oilfree
aioli with cashews as the base to go with it and it was so good I could basically drink it (recipe from @thesimpleveganista
). This would be an awesome side dish when entertaining too because they’re so pretty! Happy Monday!
• slice 1/4 in off the top of artichokes, trim the bottoms, pull off the really hard outer leaves, and using scissors, trim the top spikes part off the other leaves. Slice in half and scoop the choke out with a spoon. Boil a large pot with water, sliced lemon and some salt and place artichoke halves in. Cover and simmer for about 20 mins until the stalk is easily pierced by a fork...
