Cous cous stuffed mushrooms with salmon. I’m new to all this so not sure if you’d normally put these spices together OR with cous cous but it tastes unreal! 450kcal P: 56 C: 48 F: 20 2 large flat mushrooms 1 salmon fillet 40g uncooked cous cous (90g cooked) 40g @eatlean cheese 1 small sweet pepper 30g onion Pinch of Ground cumin, turmeric, paprika and mixed herbs 70g Broccoli 1 chicken oxo cube with 120ml boiling water Peel mushroom and remove stalk, grill top side up until slightly cooked. In the meantime start cooking your salmon however you want I like to steam mine, and throw the onion peppers and spices together. Make up chicken stock and add to onion and spices, bring to the boil then add to the cous cous. Stir then put a plate on for 5 minutes. Take mushrooms from oven and fill with cous cous, I grilled the cous cous alone for 5 minutes then added the cheese until it was melted. Seriously LOVE

Albóndigas en salsa de chipotle, arroz y calabacita 🤤 👉🏻Les cuento cómo preparé las albóndigas Necesitas: •250 gr de pechuga de pollo molida (yo no como carne de res pero también puede ser carne molida sin grasa) •1 clara de huevo 🥚 •cilantro •1 chile chipotle •1 rebanada de cebolla •1 1/2 tomate 🍅 •1 diente de ajo grande •Sal y pimienta En un bowl revuelves la carne, el cilantro finamente picado, sal y pimienta. Se deja reposar unos minutos. Mientras, se licúan el tomate 🍅 la cebolla, el ajo, el chile chipotle y poquita sal, esto se pone a hervir. Choosing low-fat cheese and dressing helps to keep the total calories lower and decreases saturated fat. Beans/legumes are a nutrient-rich, plant based protein alternative to eggs... look at you eating plant protein (your secret is safe with me) Swapping brown rice for white and adding extra veggies improves a stir fry’s fiber and nutrient profile; using less sauce helps to decrease the sodium of the dish. And I actually like these pancakes better than any others I’ve ever tried!! I also never thought I’d like yogurt on pancakes but now I couldn’t imagine having my pancakes without it🤭. I have the recipe for these a couple posts back (i also got the recipe from @madebymorrea) I topped with @foragerproject vanilla cashewgurt, cinnamon, 1/2 a banana and a drizzle of agave nectar. *chef’s kiss*.

Planning on relaxing a little bit tonight and doing some homework. • #dEATs honey garlic salmon w/ roasted sweet potatoes and slaw Coat the salmon in smoked paprika, cumin, Italian seasoning, salt and pepper. Cook on a cast iron skillet for a few minutes on each side. Add garlic to pan once you flip it. To make the sauce combine 1/4 cup honey, 1 tbsp soy sauce and 2 tbsp lime juice. Butternut squash roasted in a little bone broth...about to be puréed for my baby. Only took about 5 minutes of prep. I know where my babies food came from, exactly what is in it and it is “in season”. I put some off to the side for the two year old as well. This made about four meals for the babe and I’ll mix in some steamed spinach sometimes too.

Have you ever heard of smashed potatoes? If you haven't, you're in for a treat! I had a big bag of small to medium potatoes in my pantry that needed to be cooked before starting to sprout. So I decided to try this recipe. It's so easy to prepare. You just need to boil potatoes until tender, remove from pot and carefully crush them. Add salt, pepper and any spices you like and bake them with a little oil until golden and crunchy on the outside. If you're feeling brave maybe try asafoetida. It's supposed to taste like a combination of onion and garlic. Just make sure to use it sparingly! She’s napping now, and i miss her She’s been crawling all over me since 6 this morning & then whining about naptime. But, she got into bed and started to go to sleep & now I’m sad she’s sleeping. She’s just like me, a spitfire, with a big attitude, and so full of life, she’s not afraid to tell you exactly how she feels, and she speaks her mind whenever she sees an opening. But, she’s more gracious than me, she forgives easily, and loves so big for her four year old heart. She’s about 10 handfuls, but she’s mine & i couldn’t be more grateful.
🎃 Vegan Pumpkin Spice Cookies ⏲ 20 min Prep Time | Makes ~16 Cookies BOO! 👻 Happy Halloween! 🙌🏼 Bringing you the spookiest of cookies on this holiday 👀 Been doing lots of baking so my house smells AMAZING 😍 Had a lot of fun making these cookies 🍪 I may not have any candy to handout tonight, but I do have baked goods 😅🤷🏽‍♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe📝 Wet Ingredients: ▫️1/3 cup Pumpkin Purée (@libbyspumpkin) ▫️2 tbsp Coconut Oil, melted (@vitacoco) ▫️2.5 tbsp Maple Syrup (@coombsmaple) ▫️1 tsp Vanilla Extract ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dry Ingredients: ▫️1 cup Almond Flour (@bobsredmill) ▫️1/3 cup Coconut Flour (@bobsredmill) ▫️1/4 tsp Baking Powder ▫️Pinch of Salt ▫️1 tsp Pumpkin Spice ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Chocolate on Top: ▫️1/2 bar Dark Chocolate (@hukitchen) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How To⁉️ ▫️In a large mixing bowl, sift through all of your dry ingredients. In a small we bowl, add in your wet ingredients. Then, slowly pour the wet into the dry & mix until a dough forms. ▫️Transfer the dough to a plastic wrap & shape into a ball or rectangle. Wrap it up & chill in the freezer for 20-30 mins. ▫️Preheat oven to 350°. ▫️Unwrap your dough & add another plastic wrap on top. Roll out your dough to be as thick as you want your cookies, I made my pretty thin. ▫️Then, use cookie cutters to cut out your shapes! Reuse remaining dough to make as many as you can. Transfer to a parchment lined baking sheet. ▫️Bake in the oven for 8 mins. ▫️While it bakes, melt your chocolate with 1 tsp of coconut oil. 🎃 Vegan Pumpkin Pecan Banana Bread ⏲ 20 min Prep Time | Yields 1 Loaf Get ready, cuz this recipe will KNOCK your SOCKS OFF! 🧦💨 Jk, hold on to them cuz it’s chilly 🥶 I have been meaning to make banana bread for FOREVER 🙈 I have gone through many ripe 🍑 bananas & finally got around to using some 👏🏼 And boy, did I use ‘em well 🤤 You HAVE to try it! Just in time for Halloween 👻 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Recipe📝 Wet Ingredients: ▫️2 large, ripe Bananas ▫️1 cup Pumpkin Purée (@libbyspumpkin) ▫️2 Flax-Eggs (2 tbsp ground flax + 4 tbsp water) ▫️1/4 cup Coconut Oil (@vitacoco) ▫️1/4 cup Maple Syrup (@coombsmaple) ▫️1 tbsp Vanilla Extract ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dry Ingredients: ▫️1 cup Whole Wheat Flour (@bobsredmill) ▫️1 cup Almond Flour (@bobsredmill) ▫️1/2 cup Brown Sugar, lightly packed ▫️2 tsp Baking Powder ▫️1/2 tsp Baking Soda ▫️Pinch of Salt ▫️2 tsp Pumpkin Spice ▫️Handfuls of Pecans (@natureseats) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How To⁉️ ▫️Preheat oven to 375°. ▫️First, start off by prepping your flax egg so you can let it sit & gel up. ▫️Then, start to add all of your wet ingredients to a blender, adding in the flax egg at the end. ▫️In a mixing bowl, add in all your dry ingredients using a sifter to ensure there are no clumps. ▫️Then, add in the wet ingredients, mixing the batter together. ▫️Now for the best part! Add in lots of pecans. I like to mash them a little with my hands so they are in smaller pieces. ▫️Once you have added in your desired amount, pour the batter into a bread baking dish lined with parchment paper. ▫️Add more pecans on top. ▫️Then bake in the oven for 45 mins. ▫️Once it’s done, let it cool before cutting into it! 🎃 Pumpkin Chili Stuffed Acorn Squash ⏲ Under 30 Mins | Serves 4-6 Who loves leftovers?! 🙋🏽‍♀️ Sometimes on the weekends, I just wanna be lazy & not do any cooking 🥴 This is when having leftovers in the freezer is a plus👌🏼 This time, I stuffed an acorn squash with my vegan pumpkin chili! 😱 Soooo good 🤤 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Chili Deets👇🏼 ▫️1 medium Yellow Onion, diced ▫️6 Mini Sweet Peppers, diced ▫️4 cloves Garlic, minced ▫️Spices - Pink Himalayan Salt, Pepper, Chili Powder, Smoked Paprika, Cumin, sprinkle of Pumpkin Pie Spice & Cayenne ▫️1 small Serrano Pepper, chopped ▫️2 tbsp Tomato Paste ▫️1/2 15oz can Crushed Tomatoes ▫️14.5oz can Fire Roasted Diced Tomatoes ▫️15oz can Black Beans ▫️1/2 15oz can Kidney Beans ▫️1/2 cup Frozen Corn ▫️15oz can Pumpkin Purée ▫️1/2 cup Vegetable Broth ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How To⁉️ ▫️First prep your acorn squash. Cut off the top & bottom & scoop out all the insides. Lay upside down on a baking dish & roast for 30 mins at 475°. ▫️Put your Instant Pot on ‘Sauté’ mode. Add your onions, peppers, & garlic with some EVOO. Sauté for 2-3 mins. ▫️Then mix in your spices. I never measure but be sure to add a decent amount as you’re making 4-6 servings of food. You can always add more later 👍🏼 Be careful with the cayenne as it is very spicy! ▫️Add in all of the remaining ingredients & evenly mix. Switch your Instant Pot to ‘High Pressure’ mode & cook for 10 mins. ▫️Once time is up, hit ‘Keep Warm’ & set the timer to 10 mins. This is the Quick Release Method. 🍎 Spiced Apple Cider Waffles ⏲ Under 15 mins | Serves 2 Getting a late start to my Sunday 😬 Slept in a little & then pushed myself to go workout 🏋🏽‍♀️ It’s been over a week since I’ve been to the gym due to my trip to NYC🗽With all the walking we did, my knees have been in bad shape 😣 (which has never happened before). So I’ve been taking it easy but felt like I was ready to get back to it this morning 👏🏼 Still feeling some pain but I made it through 🥴 And rewarded myself with this delish LOADED apple cider waffle 🤤 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Skillet Deets👇🏼 ▫️1 cup Paleo Waffle Mix (@birchbenders) ▫️3/4 cup Simply Almond Milk (@traderjoes) ▫️1/4 cup Unflitered Apple Cider (@traderjoes) ▫️1 tbsp Coconut Oil (@vitacoco) ▫️1 Apple, cubed ▫️1 Banana, sliced in half lengthwise ▫️Cinnamon ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How To⁉️ ▫️Add your waffle mix, milk, cider, & oil to a blender. I used my food processor with the immersion blender attachment. Blend it all up & cook in your waffle iron accordingly. I used my @osterkitchen stand up waffle iron which cooked it perfectly!👌🏼 ▫️For your spiced apple & banana, sauté each in a pan with some coconut oil & cinnamon for about 2-3 mins. ▫️Top your waffle with all your favorites! If you plan on stayin’ G’d up, you better plan on also staying C’d up. 1 cup of kale has around 80% of your daily Vitamin C. Might as well add an extra 1/4 cup and keep it One Hunnit. You can buy frozen kale chips for less than $1. Add it to your breakfast smoovies. You won’t even know their in there. Vitamin C is true killer. Combats free radicals all over your body. Free radicals are basically snitches. They cause aging and an array of ailments. Stay C’d up.
