Remove the shell before you start cooking. Wash the rice and soak it in water for 30 minutes. Take a heavy bottom pan and set it on heat. Add half a cup of water to the pan and then add the milk. Bring the milk to boil. Drain the water from the rice and add the rice to milk. Once it comes to boil, turn the heat to low. Keep on stirring it every few minutes to prevent the milk from sticking to the bottom. After 45 minutes, add the sugar, cashew almonds and raisins. Cook for another 15-20 minutes. Remove from the heat and let it cool. Once it cools down, you can also refrigerate and keep it in the fridge for few days. Notes You can serve it either hot or chill it in the fridge. I guess it could be that the fruits found in West lend themselves well to preservation as jams but tropical fruits such as melons, cantaloupes, bananas not so much. Or it could be that that breakfast in India tends to be savoury whereas in West it tends to be more sweet; toast with butter and jam is fairly common breakfast meal. However, there are few sweet Indian chutneys made from fruits: mango chutney being the most common one and one of my absolute favourites! But there is another less well-know chutney: grape chutney. However, in India, it never went out of fashion and we grew up eating seasonal fruits and vegetables, freshly prepared using spices and herbs. Karela is one of the vegetables cooked regularly in Punjabi homes during the summer months. Itโ€™s one of my absolutely favourite dishes to eat with mangoes and lassi (cooling drink made from yogurt) during the hot summer month. ๐ŸŒฟ Karela, called bitter gourd, is also well known for numerous health benefits and its juice, though extremely bitter, is a well-known remedy in Ayurvedic medicine. While itโ€™s great to drink the bitter juice for health reason, a bitter vegetable dish probably wouldnโ€™t be a great hit with anyone apart from the health nuts! Vermicelli noodle kheer ๐Ÿ’• Ingredients ๐Ÿ’• 50 gram whole grain vermicelli 5 cups semi-skilled milk can use full fat too but avoid using zero fat milk 1/4 cup sugar 20-25 almonds Instructions ๐Ÿ’• Toast the almonds until they are lightly golden. Coarsely grind the almonds into large chunks. Break the vermicelli noodles into smaller chunks, about 1-2 inch in length. This can create a bit of a mess so do it in large bowl. Toast the vermicelli noodles in a large pan on high heat until lightly golden. Stir continuously to make sure that the noodles do not burn. In the same pan that you toasted the noodles, add the milk and ground almonds. Bring the milk to boil and turn off the heat to low. Simmer on low heat for 10-15 minutes. Make sure to stir so that the milk doesn't stick to the bottom of the pan. After 15-20 minutes, the noodles should be cooked. Taste a small amount of noodles to make sure that these are fully cooked because once the sugar is added to the noodles, the noodles will stop cooking. You can add more milk at this point if you feel that it need more milk. Once you are satisfied that the noodles are cooked, add the sugar. Mix in the sugar and cook for another 5-7 minutes while stirring to prevent the milk burning and sticking to the bottom of the pan. Turn off the heat and cover. Serve the kheer either freshly made or leave them overnight in the fridge and serve cold next morning. However, if you serving them cold, the noodles will thicken. The mango season starts in late May and continues until August. Mangoes come in abundance of flavours and varieties such as langra, dussehra, tota, chausa, kesari, alphonso and my favourite, safeda. ๐ŸŒปโ€ฉI don't think any fruits comes close to the taste and decadence of mangoes. When we were kids, we use to fight over who will get the biggest mango. And my mom, to this day, makes sure that she gets a bigger share of the mangoes than my dad! She keeps a close tally on how many mangoes that my dad has eaten. And this despite the fact that my parents eat mangoes every day during the summers! ๐ŸŒปโ€ฉWhile mangoes are devoured like there is no tomorrow, people try to preserve mangoes in the form of pickles and chutneys to enjoy their golden goodness through out the year. While we have dozens of varieties of pickles in India, mango pickle is one of the most important pickles in the Indian cuisine. It's as ubiquitous in India as the salt and pepper on the western dining tables. ๐ŸŒปโ€ฉWhen we were kids, my mom would make dozen of kilos of mango pickle every summer to last us the whole year. The whole family would get involved and the weekend would be spent in cleaning, drying, peeling, cutting the mangoes, mixing and storing the pickle. I doubted that we kids added any real value as our main motivation was to steal as many slices of raw mangoes as possible to eat with salt!โ€ฉThis is a much cherished recipe from my childhood. Need spice in your life? But there are too many to chose from !? ๐ŸŒป Well then worry not, help is at hand in the form of garam masala. Garam means hot and masala means mix so garam masala is mixture of hot spices! Itโ€™s perfect for cooking Indian and you can make a bunch and keep in the jar for use in your curries, soups, lentils & sabjis! ๐ŸŒป Ingredients ๐ŸŒป 250 gram black pepper whole 250 gram cumin seeds 150 gram coriander seeds 100 gram black cardamom 2 tbsp cloves 100 gram fenugreek seeds 50 gram cinnamon sticks ๐ŸŒป Instructions ๐ŸŒป 1. Roast each spice separately at low heat until they release the flavour but not burned. The reason for roasting each spice separately is that they cook at a slightly different rate. Make sure to stir while roasting to prevent burning. ๐ŸŒป 2. Mix all the spice together and let the mixture cool down completely. ๐ŸŒป 3. Ground the spice mix in a grinder to a fine powder (but donโ€™t make it super fine!). ๐ŸŒป Notes ๐ŸŒป Store the garam masala in airtight container made from glass or steel. Please don't use a wet spoon to take out the garam masala as it will spoil. ๐ŸŒป Another trick is to roast the spices and keep the spice mix in a glass jar. While, I was doing my internship in Mumbai,ย India, one of my favourite things was to walk up to the Chaupati beach in the evenings, eat chaat (another fantasticr street food)ย and pau bhaji followed by kulfi (Indian ice cream). These were the only three things that the vendors on the beach served and these were so so good! If you are ever in India, and happen to visit Mumbai, a trip to Chaupati beach is worth the to try these delicacies. ๐Ÿƒโ€ฉEven though pau bhajiย is originally from Gujrat, a state on the Western coast of India, where people are mostly vegetarian and abstain from drinking, you can find it in most large cities in India. Pau means soft bread roll and bhaji means dish. When I was a kid, I loved the cousin of arbi called, kachaloo which is also related to the potatoes. โ€œAlooโ€ in โ€œKachalooโ€ means potato. So from this, I can infer that taro root and potato are related. That would explain the taro root fries served in the London restaurants. What is curry? ๐Ÿƒ Besan Kadhi (chickpea flour curry) ๐Ÿƒ When I first moved outside of India, my western colleagues and friends kept on asking me about "curry masala" or my favourite curry. I was completed baffled as I had no idea what they were talking about.ย  The only kind of curry I knew was the one made from besan (black chickpea flour). I tried explaining but it only confused matters further.ย  Slowly it dawned on me that in the West all kinds of Indian dishes are lumped together into a generic term called curry ๐Ÿ˜! ๐Ÿƒโ€ฉThere is no concept of curry in India - it's an oversimplification to help folks in the West deal with the complex and varied Indian cuisine. The mango season starts in late May and continues until August. Mangoes come in abundance of flavours and varieties such as langra, dussehra, tota, chausa, kesari, alphonso and my favourite, safeda.โ€ฉ๐ŸŒฟโ€ฉI don't think any fruits comes close to the taste and decadence of mangoes. When we were kids, we use to fight over who will get the biggest mango. And my mom, to this day, makes sure that she gets a bigger share of the mangoes than my dad! She keeps a close tally on how many mangoes that my dad has eaten. And this despite the fact that my parents eat mangoes every day during the summers! ๐ŸŒฟโ€ฉWhile mangoes are devoured like there is no tomorrow, people try to preserve mangoes in the form of pickles and chutneys to enjoy their golden goodness through out the year. While we have dozens of varieties of pickles in India, mango pickle is one of the most important pickles in the Indian cuisine. It's as ubiquitous in India as the salt and pepper on the western dining tables. ๐ŸŒฟโ€ฉWhen we were kids, my mom would make dozen of kilos of mango pickle every summer to last us the whole year. The whole family would get involved and the weekend would be spent in cleaning, drying, peeling, cutting the mangoes, mixing and storing the pickle. I doubted that we kids added any real value as our main motivation was to steal as many slices of raw mangoes as possible to eat with salt! ๐ŸŒฟโ€ฉThis is a much cherished recipe from my childhood. However, in India, it never went out of fashion and we grew up eating seasonal fruits and vegetables, freshly prepared using spices and herbs. Karela is one of the vegetables cooked regularly in Punjabi homes during the summer months. Itโ€™s one of my absolutely favourite dishes to eat with mangoes and lassi (cooling drink made from yogurt) during the hot summer month. ๐ŸŒฟ Karela, called bitter gourd, is also well known for numerous health benefits and its juice, though extremely bitter, is a well-known remedy in Ayurvedic medicine. While itโ€™s great to drink the bitter juice for health reason, a bitter vegetable dish probably wouldnโ€™t be a great hit with anyone apart from the health nuts! One of the commonly used methods from removing bitterness is to make the vegetables sweat by salting them and then squeezing the excess water from the vegetables. ๐ŸŒฟ In this recipe, I have used saunf (fennel seeds) which adds a lovely touch of sweetness to the dish.
