So as you know, I am studying to become a Registered Dietician. Along with being a full time university student! One of the most important things to do if you are becoming a RD is to be able to cook and give recipe ideas to your clients. So this is one of my favorites for the morning , that are high in Omega-3’s and high in Vitamin D! This is a chia and gluten free oatmeal, that can be left overnight in the fridge and if you are lactose intolerant you can make it with your choice of dairy free milk. I used almond milk for mine (I’m lactose intolerant), a handful of chia seeds and a packet of oatmeal from Trader Joe’s. I combined the ingredients and put in the fridge overnight, and Ta-da! This is one type of breakfasts I have, trying to provide as much as possible nutrients in the morning 🌞 💪🍓 I cook first some grains like quinoa, millet, oats, buckwheat, top it up with coconut or goat’s yogurt and pour berries smoothie on it. 🍓 The smoothie usually contains: A cup of mixed frozen berries: blueberries, currants, raspberries, blackberries A handful of greens: spinach, kale, parsley🥬 2 scoops of hemp seed protein (or pea protein) - full of good essential fatty acids and not changing a lot the taste of the smoothie A celery stick A bit of yogurt or almond milk I sprinkle it with seeds like sunflower seeds, pumpkin seeds or flax seed. This is a good start of the day! Breakfast time! Have I mentioned that breakfast is my favourite meal of the day? Especially when it's this delicious. I managed to find some pretty cheap strawberries (from Poland, the Swedish ones are long gone 😥). So I had to have a strawberry and peanutbutter sandwich on rye bread. Another favourite is boiled egg on rye. I boiled the egg yesterday evening so unfortunately it wasn't hot but it was still delicious 💛🍓🥜

Chicken Bacon Ranch Zucchini Boats . It’s been a while since I shared a yummy recipe and I get questions all the time about what I eat and recipes I use. . So here is one - husband and kid approved! . Ingredients 1 pound chicken breast raw 4 medium zucchini 3 strips bacon cooked and chopped 1 clove minced garlic 1/2 cup homemade ranch dressing salt and pepper to taste 1/2 cup Mexican blend cheese . Instructions 1. Preheat oven to 400 degrees. 2. In a medium pot boil your chicken until it reaches an internal temperature of 165 degrees. Remove your chicken from the pot and use two forks to shred the chicken. 3. In a medium mixing bowl stir together the chicken, bacon, garlic, ranch, salt, and pepper. 4. Cut your zucchini in half lengthwise. Using a spoon scoop the seeds out of the zucchini to create a well for your filling. Place the zucchini into a 13x9 baking pan. 5. Fill the zucchini with your chicken mixture. 6. Sprinkle the tops of the zucchini with cheese and cover the pan with aluminum foil. 7. Bake for 20 minutes and remove the aluminum foil and continue to bake for another 5 minutes.

Good morning 🦋… and what a perfect way to start the day. 30 Minutes’ 4 KM sunrise 🏃‍♀️ complete and now pre work / post run breakie. Hummus, avocado 🥑 and cucumber 🥒 toast. This is one of my favorite. The carbs from the whole meal toast gives me energy and fiber. Avocado gives me healthy natural fats my body can digest and the hummus is my protein… A perfect balance of carbs, protein and fats…. I had two slices today, one tablespoon hummus and half an avocado.  Enjoy this at 396 calories. I am on a 1600 calories a day plan. I have three meals a day at roughly 400 calories per serving. My snacks are fruit, nuts or smoothie, two times a day at 100/150 calories per serving. I am more than satisfied because I eat energy dense food and not fatty foods high in calories but low in energy. This is a perfect size and calorie intake for one meal. 🥣V's Nutrition Hub Friday - let's talk about OATS🥣⁠ ∞⁠ If you are following me for a while, then you know that OATS is my favourite grain.⁠ ∞⁠ The most awesome thing is that you can eat them sweet, savoury or use for baking as oat flour.⁠ ∞⁠ But what are the benefits of this grain and why the actual is better than the boxed up rubbish, we buy in the shops.⁠ ∞⁠ Oats is a great source of soluble fibre called beta-glucan, which has been proven to reduce cholesterol.⁠ ∞⁠ Just 3g of beta-glucan per day seems to be an optimal amount to achieve this in both people with normal and high cholesterol.⁠ ∞⁠ Roughly 40g of oats contain 2g of beta-glucan. Also, increasing soluble fibre in our diet can help with constipation, as it can help soften the stools and make them easier to pass through.⁠ ∞⁠ So in summary, oats are a secret medicine when it comes to our health.⁠ ∞⁠ You won't definitely regret creating your own version of the porridge in the morning. The Perfect Grain Free Granola // This protein packed power breakfast will give you all the energy you’ll need to hit the ground running (and it’s delicious!). The benefits of a high protein breakfast is that blood sugar levels are maintained at a healthy level for much longer than a carbohydrate based breakfast eg cereal or toast. This means you have much more available energy and feel more satiated for longer. This makes a bucket load. Store in the fridge (to keep the healthy oils in the nuts and seeds fresh) in a glass jar. This granola will last over a week when stored like this. • 50g coconut chips • 50g pumpkin seeds • 50g sunflower seeds • 50g cacao nibs • 100g hazelnuts • 100g macadamia nuts • 100g walnuts • 100g pecans • 100g Brazil nuts • Pinch of salt flakes • 1 tsp ground cinnamon • Pinch of ground nutmeg • 1/3 cup apple juice concentrate (available in health food aisle in the supermarket) • 1/3 cup coconut oil (melted) Pop all the ingredients together in a large baking tray. Get your clean hands in there and toss it all through thoroughly. Pop in a moderate oven for 5 minutes or so. You don’t want to toss the bits and seeds as they’ll lose all those lovely essential fatty acids. Serve with coconut yoghurt and fresh seasonal fruit. Enjoy!
