~ MUFFINS ~ . Muffins are very popular in our house. They are an easy to make, convenient, freezer friendly and nutritious snack that don’t have to be an oversized, sugar-filled cake like what you may find in some cafes. . I like to use a wholemeal flour and some rolled oats in my muffin recipes and most of the flavours will include and fruit and/or vegetable for some extra fibre and vitamins and minerals. . These Pumpkin and Apple Spice Muffins are one of my favourites. They contain pumpkin, which is a great source of fibre and beta carotene, which is converted to vitamin A in the body, which helps protect eye sight. Vitamin A, along with Vitamin C, which is contained in pumpkins are antioxidants, which increase immunity and fight free radicals present in the body. . Apples are also a good source of fibre, including soluble and insoluble fibres, assisting with digestion and improved gut function. Apples are a low GI fruit, meaning that following consumption the spike in blood sugar level is lower than one with a high GI. This is particularly helpful for individuals with type 2 diabetes. . If you’re looking for a good snack these school holidays, try these Pumpkin and Apple Spice Muffins, and if you can tolerate nuts, add in some walnuts for some extra protein and healthy fats, just because you can being school holidays! . 🎵 On the road again, I just can’t wait to get on the road again... 🎵 • Today we drove 4 hours up to Twin Falls for the wedding of a good friend whom we love so much. I thought my heart would burst I was so happy! ❤️ • Packing food for so many people is tricky, but luckily, I got to eat breakfast at home. Yesterday I made three waffles and froze two, so breakfast this morning was super easy. • I had planned to get a salad for lunch, but I forgot Del Taco puts wheat in their meat. 😞 Not a big deal, but kind of a pain for someone avoiding gluten. Luckily, it didn’t make me bloated or my head hurt (which it usually does both). 🎉 • For dinner I grabbed the Zuppa Toscana I had in the freezer for my husband. Sorrrryyyyy. I told him I’ll make him some more. • And for fun, swipe if you want to see me this summer right before rezooming with BLE vs tonight. I was with my husband both times, but I don’t generally post pictures of him without his permission and he’s asleep. 😆

You guys, these pretty pink pickled radish are truly incredible! . . I can not stop eating them! . . Well, that’s not entirely true, I’m a big girl, I’m sure I could stop if I wanted to .. . But I really don’t. . . Not even a little bit. . . They’re just so good. . . Don't be intimidated by making your own pickled veg people, it's oh so easy! . . No fancy equipment,no special eye-wear, lab coats or bunsen burners required. Honest. . . All you have to do is slice up your pretty pink radish (or veg of choice) , stir together some water, vinegar & salt. Throw in a pinch of caraway seeds & you're good to go. 👌🏻 . . Easy right?! Not at all scary! . . And you guys, these pickled radish are oh so delicious. . . Like really, truly, incredible delicious! . . Crispy, crunchy, salty, sweet - sooo good! . . Eat them simply as they add, add them to your nourish bowl, serve with with avocado toast, with smoked salmon, on fritatta . . . the options truly are endless! . . And look at how pretty they are 😍😍😍 .. . Love that 80’s retro neon glam glow ! . . Anyway, I could talk about how in love with these I am allllll day long. So Ima go & just let you have at it; . . Here’s how you do it ; . . 🌟1 C radish – washed, dried & thinly sliced . 🌟1/4 C @niulife cider vinegar - regular ACV works too . 🌟1/4 C warm water . 🌟1 tsp good quality sea salt . 🌟1/2 tsp caraway seeds . . ✳️ Mix salt & water until salt has dissolved . ✳️ Add vinegar & caraway seeds give it a stir . ✳️ Add sliced radish top up with extra cold water til all radish are submerged .. ✳Let sit at room temp for at 15 (or longer) then store in the fridge. . . Our lives are a compilation of stories we tell ourselves, often formed as coping mechanisms when we're kids. These stories hold us hostage to a past that doesn't serve us. But! They are are malleable and we can rewrite them. I got it into my head that I wasn’t the poster girl for health and wellness and so wouldn't even try. My story was this: 'I've been been fat for the longest time and I'm now beyond help. I got myself to this point and now I'm suffering the delipidating effects of obesity. I've tried every diet unsuccessfully, so I must just spend the rest of my life stumbling through poor health, smile through it all, be charming and hope no one notices. Health, wellness and fitness is for other people'. This was reinforced when family and friends kept repeating it back to me. The weight and sedentary lifestyle became an inside joke that self-depricating me and friends or family would laugh about. Deep down, I knew it wasn’t funny. Not when I was alone at home battling to tie my bloody shoelaces! Because of my ingrained story, experimenting with a holistic healthy approach conflicted with my identity. And it became a self-fulfilling prophecy. I used to be too shy to order a salad guys! In my mind, I didn't fit the picture. I mean! Can you imagine the level of self-f*ckery??!!! I had to take a hard look at the life I'd created and the patterns that had played out. My waning health forced me to try to show up authentically to my heart's desire and what I've now come to realise as my passion and life's work. My pain has become my testimony and I've realised that had any of my shortcuts worked in the past and helped me lose weight quick, I would've missed the opportunity to learn about my health! I often flip back a few pages because forming new habits and retraining the palate isn't easy, but I keep moving. Commit to the process. Don't believe the lie that it's not working or that things aren't changing. It took longer than a day to morph out of who you really are and you will have to be determined to stick with it until you have completed your new script. It's time to break free from your past and take this show on the road!

💋 Cooking Adventures 💋 I love watching variety shows by Korean Celebrity Chef 👨🏻‍🍳Baek Jong Wan. He recently has a new show showcasing high school 🏫 kids mass cooking 👫for their peers. Very entertaining concept! They have to plan the menu and churn out hundred over portions of food on national TV, imagine the pressure!! 😱😱Kudos to them for their resilience 🎉! Chef Baek also gives many interesting ideas and tips. One of them I remembered was adding eggplant to rice. Turns out so delicious, the mushiness of the eggplant mixed with 🍚 rice! Yummy!! Do you watch his 📺 shows too? _______________________________________________________ 1. Brown rice with eggplant 🍆 and dried shiitake 2. Stir-fried tomatoes 🍅 with maitake 🍄. 40 kg lost. Started with the Dolce diet, and while effective, something wasn’t right. Went paleo, dropped grains and dairy, low carb super high fat. 70% there. Then the plant refination started. Some dairy added back in. 80% there. Realised that most plants had some negative effect, even if slightly. Then realised all the supplements, MCT oil and keytone powder were beneficial, but not needed. It has to be simpler than all of this! Then I realised the gym was just like the supplements. I need to be working physically harder, so at 44, I went back to first fix roof carpentry (my trade), binned ideas to work in an office as a functional medicine doctor for now (still studying) and ramped up my daily pain levels, and energy output. Then went carnivore, inflammation dropped to almost zero, lost final 13kg, started running again for the first time in 17 years because my knees were healing so well. Today I eat only meat (80% organic), drink san Pellegrino water and use copious amounts of quality salt (up to a tablespoon a day which stops muscle cramps, keeps energy high and aids healing but keep your water intake high!) and have a weekly work output most could never hope to keep up with, running rings around the young guys. 7 months later I have never felt clearer, happier or more determined. Simplify it, we complicate shit as an excuse not to do the work. Understanding the complexities of life is not the same thing. Comfort is a slow death. I was looking for a good pasta recipe and stumbled over this the other day. And I have to say this recipe is a keeper. Unfortunately my fresh cream was expired so I gave this recipe my own twist, by substituting cream with milk and chicken broth with knorr cream of mashroom soup. It tasted really delicious do give it a try. Swipe to see @momables Recipe video. ⠀ CHICKEN ALFREDO BAKE 📝 @momables 📷 @a_tale_of_sauce_and_spice ⠀ 1 tablespoon olive oil⠀ 3 chicken breasts, cubed⠀ salt, to taste⠀ pepper, to taste⠀ 4 cloves garlic, minced⠀ 2 ½ cups chicken broth⠀ 2 ½ cups heavy cream⠀ 1 lb penne pasta, uncooked⠀ 2 cups parmesan cheese⠀ 2 cups mozzarella cheese⠀ 1 handful fresh parsley, chopped⠀ ⠀ In a pot, heat oil and add chicken.⠀ Season chicken with salt and pepper.⠀ Add garlic, then brown the chicken.⠀ Add broth, heavy cream, and pasta, and bring to a boil.⠀ Cover and reduce the heat to a simmer for 15-20 min.⠀ Turn off heat and stir in 1 ½ cups (165 grams) of parmesan cheese.⠀ Pour half of the pasta into a greased 11×7 inch or 9×13 inch (28x18 cm or 33x23 cm) baking dish.⠀ Sprinkle evenly with 1 cup (115 grams) of mozzarella cheese.⠀ Layer the remaining half of the pasta evenly on top. Sprinkle evenly with 1 cup of mozzarella (115 grams) and ½ cup (55 grams) of parmesan.⠀ Broil 10 - 15 minutes, or until the cheese is golden brown. Remove and sprinkle with fresh parsley. ⠀ ADAPTATIONS FROM MY SIDE I used 4 Tblsp knorr cream of mashroom soup dissolved in 1 cup milk (in place of chicken broth). To the chicken I added 1 tsp ground green chillies & 1 tsp italian herbs along with the garlic, salt and pepper. I also used bliled pasta. So you may use cooked or uncooked pasta it's up to you. One last tip to keep the pasta creamy and saucy before baking since the baking dries out the pasta. When my brother said he’d come over for dinner I took that to mean, “Forget what you planned and make something complicated, I’ll watch the kids.” . It’s nice to have a plan but it’s also nice to have ingredients that are flexible enough to be frozen and/or repurposed when the plan no longer suits your needs. . Tonight we planned on salmon with a chickpea, tomato and basil salad. I kept the salmon in the freezer, the chickpeas in the pantry and used the tomatoes in this epic salad platter and opted to make basil-parmesan meatballs instead. . I’m not suggesting that you lock your kids in the yard with your brother and make meatballs on a Saturday afternoon, unless the kitchen is your happy place too, but I am suggesting that it’s nice to have a plan that’s flexible enough to forget about from time to time so you can adapt to what’s happening in your life each day. .
