Cinnamon rolls I made for the last Fairbanks Vegan Potluck. This is one of my fav recipes. Oddly given to me from a former co-worker. They are not yeast cinnamon rolls but more of a biscuit taste. They are SO good and so easy to make. Don’t have to wait for them to rise. Ugh yummmm. Could go for one right now. Recipe is from It Doesnt Taste Like Chicken blog 🌱

One of ours is waking up to smell of freshly baked banana bread and this recipe is so easy to make, involves no electric appliances and is so delicious 😋 #bananabread #veganbananabread #banana #cinnamon #veganfood #vegancake #veganbreakfast #bestbreakfast #vegansofinstagram Easy Cinnamon Banana Bread 3 cups organic plain flour (or 1:1 gluten free flour) 2 tspns baking powder 1 tspn baking soda 1/2 tspn salt 3 tblspns golden flaxseed meal 3 small mashed ripe bananas 150g vegan butter 2 tblspns solid coconut oil 1 tspn ground cinnamon 1/2 cup packed brown sugar (or 1/4 cup raw sugar/stevia 50:50 mix) 2 tspns vanilla extract 1/3 cup almond butter 1/2 cup soy milk mixed with 1 tblspn lemon juice 1/4 cup filtered water 1/2 cup dark chocolate chips Date syrup to swirl on top before baking (optional) Preheat the oven to 175•C and grease and line a loaf pan. In a medium bowl sift the flour, baking powder, baking soda and salt. Add the flaxseed meal and stir through the flour. In a small saucepan over low heat, melt the butter with the sugar and coconut oil. While still over low heat, stir through the mashed banana, vanilla, cinnamon and almond butter. When all melted and well mixed, remove from heat and stir through the soy milk/lemon juice mixture. Add the wet ingredients to the dry ingredients. When just combined, stir through the filtered water and then the chocolate chips. Pour into the loaf pan, smooth the surface, drizzle over some date syrup and bake for 42 to 45 minutes. Allow to cool in the pan for 5 minutes then remove from pan and allow to completely cool on a wire rack before slicing.

“Carbs in My Hands: A Series” Okay y’all I heckin’ did it and found me a place that sold (accidentally) vegan trdelník!!! Also called chimney cake. It’s rolled around a stick and cooked rotating over coals (traditionally) then rolled in cinnamon sugar and sometimes walnuts. Sometimes filled with ice cream and whipped cream but I got mine with strawberries. Basically imagine a cross between a pretzel and a churro. Also it’s marketed as the traditional Bohemian dessert to we stupid tourists but it’s actually not really traditional to the region🤷🏻‍♀️oh well, still tasty. Friday night and Dougie is off duty! In the mood for large margaritas and custom vegan pasta with veggies. So I suggest to @mommy_flaurie that we head over to @glorydaysgrill and ask the Manager Jorge Hernandez to create a delicious vegan meal for us. They did not disappoint! 🌱😜🌱 * We wanted penne and they didn’t have any prepared so we ordered some sweet potato 🍠 fries to hold us over while that penne boiled. They cook their fries in separate oil which keeps them vegan and gluten-free. 🌱😎🌱 * The penne with broccoli, basil, green pepper, mushroom, sun dried tomato, olive oil, and balsamic reduction was amazing! I added fresh ground black pepper. Thanks Jorge and team! The coolest thing was having a staff member come up and ask us what we ordered because it smelled so good as our server walked it to our table. 🌱✌🏼❤️💪🏼🌱

Historically used as a poison, nightshades have found their way onto plates all over the world. But many people believe that nightshades are harmful to the human body because they contain alkaloids. Alkaloids are toxic substances containing nitrogen that function as a plant’s natural repellant against insects. In the human body, these compounds are poison to the gut, particularly in those with compromised immune systems, causing digestive issues and other symptoms of inflammation. Research shows that nightshades also increase intestinal permeability and exacerbate symptoms of autoimmune conditions like celiac disease, multiple sclerosis and rheumatoid arthritis. Many people with digestive conditions, like IBS or Crohn’s disease, have found profound relief from their symptoms by eliminating nightshades from their diet.
