6️⃣ point cake & ice cream 🍰 🍦 For the cake, mix and microwave the following ingredients for 75 seconds in a bowl: - 42g @pillsbury sugar free cake mix (3pt) - 2 tablespoons of water Top with sugar free @hersheys syrup (0pt) and 1/2 cup @eatenlightened glazed donut ice cream (3pt)
Pretzel Crusted Chicken Cordon Bleu made in the air fryer. 3 ww points. Served with Skinny Cheesy potatoes from @theskinnyishdish. 2 large chicken breasts 2oz ham (i used Oscar mayer deli fresh uncured ham which came out to 0 points for 3 slices per serving) 2 slices thin sliced swiss cheese Flour* Crunchy Pretzel flavored Shake n Bake* 1 egg Cooking spray *You need enough flour and Shake n Bake to pour out onto a plate and coat the chicken in. I calculated my points based on the assumption that 1 Tablespoon of flour stuck to the chicken, and 1 serving of Shake n Bake. If you want to be sure, you could weigh the chicken before and after coating 1. Divide the ham and cheese in half. Wrap the cheese in the ham, making 2 little ham burritos. This keeps any cheese from escaping when it melts. Swipe to see a photo for clarity. 2. Using a paring knife, carefully cut a pocket into the side of each chicken breast, stuff the ham burritos inside and close. Swipe for photo (yeah- I know what it resembles 🙈). 3. Line up 3 plates, pour the flour onto 1, whisk your egg in the second one, and pour out the Shake n Bake packet onto the 3rd. One at a time, coat each chicken breast in flour, then egg, then Shake n Bake. Then spray both sides with nonstick cooking spray. 4. My dinner tonight. Shake n bake chicken tenders, with SF honey mustard dipping sauce, and some steamed carrots. My car decided to die today so my husband and I have been running around like crazy people trying to get it fixed. The stress from that and some other things going on made me really want to eat something that I really didn’t need. I had my entire binge planned out in my head. Sounds crazy I know, but if you suffer from binge eating you get it. Luckily I decided it wasn’t worth it, and when my husband and kids grabbed McDonald’s for dinner, I stayed home and made this. Little things like this make me realize I am making small changes, and I am making this a lifestyle and not just a diet. We went apple picking over the weekend so of course I had to find a @ww friendly recipe to make a fall dessert. This easy “Apple crisp” is 3 sp took less than 5 minutes to make! 🍎 Peel and slice one apple and put in a microwave safe bowl. Sprinkle with 1 tsp os Splenda and 1 tsp of apple pie spice. Stir and microwave for 1.5 mins. Remove from microwave and sprinkle with 1/2 pouch of cinnamon brown sugar instant oatmeal and mix. Microwave for another minute and enjoy! I had bought some ham steaks from Costco and I wasn’t quite sure how I wanted to cook them. I whipped this up tonight and it is amazing!! Perfect for this windy/rainy day! Give it a try! You won’t be disappointed! 😁 Ham & Noodle Casserole * 224 gm noodles of your choice * 10 oz frozen green peas and carrots * 1 C sour cream * 1.5 C cream of chicken soup * 1.5 C FF shredded mozzarella * 1/3 C shredded Parmesan * 12 ounces diced ham * 1 tsp dried thyme * 1 tsp dried parsley * 1/4 tsp salt * 1/2 tsp black pepper * Cook noodles in salted water according to package directions. Drain well. * While noodles cook, place cream of chicken soup, sour cream, thyme, parsley, salt, pepper, Parmesan, and 1 cup shredded mozzarella in a large mixing bowl; stir until well combined. Add chopped ham and mixed vegetables; stir to combine. Add hot drained noodles and stir to combine. * Spoon noodle mixture into a greased 9X13 dish. Sprinkle the top with the remaining 1/2 cup shredded mozzarella. If you caught my Trader Joe’s haul on Sunday, I talked about the coconut shrimp I found at @traderjoes. I put a few of these bad boys on some crispy corn tortillas, added a crunch kale mix, and then drizzled nonfat greek yogurt + chipotles in adobo to make spicy sauce, then had fries and carrots on the side! This is a prime example of how I take 6 ingredients and make a full meal out of it in 25 minutes. Alright guys I deleted the other one because now I have a picture in the same shirt! This is my first transformation picture I’ve ever posted! I never really made it far enough in my journey to have transformation pictures before I gained the weight back. I’ve been so focused since July 24th and I have lost 23.4 lbs total! I haven’t seen this number on the scale since March of 2016 😮 I am starting to notice in my clothes and also having others notice which totally keeps my motivation on fire. I still don’t totally feel/notice the difference so seeing this photo just amazes me! I think the craziest part is how loose it is in my arm!!

Bored eating the same meals? This is what I do to make all things kitchen and cooking interesting: 1. I use Pintrest to get some inspiration 2. Make a list of 4-5 healthy meals you find relatively easy to prepare and you love to eat. 3. Then make a grocery list for these (in advance). 4. Stick it on the fridge. 5. Take this next shopping trip. This means in times of stress and overwhelm we don’t need to pick up the take away menus, we are prepared! We have a fridge full of yummy and nourishing food that we enjoy. When we eat meals that are nourishing AND satisfying, we are less likely to overeat after dinner by snacking all night long and grazing through the cupboards every 10 mins to check if there is anything yummy in there. I decided to wing it for my dinners this week. I did souvlaki for lunch again so had to buy some 0% greek yogurt for the tzatziki. I'm not really a fan of plain yogurt so had to find a use for the left over yogurt. This is a thrown together creamy tomato veg and chicken pasta. I went a bit crazy on the veg 😆 there's red onion, red pepper, sweet pepper, chickpeas, courgette and mushrooms. I had to bust out the giant pan just to cook it all 🥘 The sauce is the yogurt, tinned tomatoes, garlic, parsley, oregano, smoked paprika, cayenne pepper and cumin. So far that's all zero points. I’m pretty sore from the gym yesterday so we went on a nice long 3 mile walk with the dog this morning. I was starving when we got home so I had one of my favorite frittatas (2sp) with some @cholulahotsauce and one of my pumpkin chocolate muffins (2sp). Hubs thinks I’m weird for this but I really like muffins frozen lol. Anyway delicious and filling breakfast got me ready for a very busy day at work.

Hello my name is Anna and I have a problem. I’ve had these crunchy & spiced baked sweet potatoes fries three times in the last 7 days 🙈. And I’ve just bought another two massive sweet potatoes whilst popping to the shop for milk. Recipe coming up tonight, however I’m not taking any liability, try at own peril!
Ever have those nights where you have random ingredients in the fridge you need to use before they go bad? That’s what this was. I had some jalapeños and cilantro I needed to use and it turned into this simple and yummy dinner.⁣ ⁣ Ingredients: ⁣ 2 chicken breasts⁣ 2 fresh jalapeños (remove the seeds)⁣ 1.5 cups cilantro ⁣ 2 corn cobs⁣ 2 Tbsp chopped garlic ⁣ Pinch of salt⁣ Cooking spray ⁣ 1 cup Greek yogurt⁣ 2 tsp chili lime seasoning ⁣ 1 lime juiced⁣ ⁣ Directions: ⁣ Pre heat your grill on medium. ⁣ Put jalapeños, cilantro, and garlic in a food processor. Rub the chicken breasts with 2/3 of the mixture. Put chicken on the grill until it reaches 165 degrees. Spray corn with cooking spray and put on the grill. ⁣ Add all other ingredients to food processor and blend. ⁣ Once everything is fully cooked, spread yogurt mix on to the corn cobs. I also used the yogurt dip for my chicken as well. Tonights dinner: kimchi soondubu jjigae! Hope I didn’t butcher that! Basically it’s tofu soup flavored with kimchi. The soba noodles made this a little point heavy (8sp) but you could easily go sans noodle. I’ll be honest it wasn’t as good as in a restaurant but not bad for a first try! At least it was something different 👍🏻 And we had mini dumplings with so it was a pretty yummy meal.
Dinner was 6 points. Two for the salad, 1 for the sauce with ground turkey breast and 3 points for the half serving of this spinach fettuccine. Not going to lie, I have not ate the best since being at the beach since Friday! I’ve had fried clam strips, country cooking buffet, Paula deans restaurant with fried fish, bbq ribs, Mac and cheese, corn and rolls! Going home tomorrow and I am going right back to healthy eating! I lost almost two pounds for the week before I left which I am sure I gained back...we shall see the damage tomorrow 😂 having meals not quite on plan is no big deal as long as you don’t stay eating that way! MEATBALL STROGANOFF • • Happy Fall Y’all! I’m back from a little break. I had the worst sickness with no appetite and then just got back from being in Florida for a week where I took the week off from tracking. Figured there was no better way to start back fresh than with a new recipe! This is one my favorite recipes that my boyfriend’s mom makes and it’s the perfect comfort food for fall. I decided to test it out with a lightened up version, and it turned out perfect! For the meatballs, I used my homemade ones I froze, so keep in mind points will vary depending on ingredients you use! I had 11 total meatballs left, but I also ended up cutting them in half to make it seem like more. • Stroganoff Sauce & Noodles (9sp) 3 Meatballs (2sp) To make, spray pan with Pam and add frozen meatballs. Brown on each side, then add can of 99% FF Beef Broth and all seasonings, let simmer. Start boiling water for noodles. Once water is boiling, add 4c noodles and cook. Add the cream cheese, milk, and FF sour cream to the pan and cover to let boil/thicken. Once noodles are done, add to the pan and cover for another 5 minutes to thicken the sauce. Dinner tonight 🙌🙌. Of course @traderjoes frozen diced cauliflower stir fry (bc you can’t go wrong with TJ frozen food 😂) with some leftover pork. You know I’m always making “fridge” stuff bc I apparently don’t know how to cook for two... 💁‍♀️😂. SO this week I have this leftover pork from ribs I made this weekend. I’m going to throw it in with that riced cauliflower and @kikkomanusa teriyaki glaze and baste. Update... it was SO GOOD 🤩🤤🙌. The pork had a spicy rub on it already so it just added another layer of flavor yumminess. I had TWO cups for 5pts 🥳🥳🥳. If you don’t know about TJ frozen foods you should check them out.
